Instrucciones:
- Enjuaga el arroz bajo agua fría hasta que el agua salga clara. Reserva.
- En una sartén grande o paellera, calienta el aceite de oliva a fuego medio. Agrega la cebolla y el ajo, y saltea hasta que estén dorados.
- Añade el pimiento rojo, la zanahoria, el tomate, los guisantes y las judías verdes. Cocina durante unos minutos hasta que las verduras estén tiernas.
- Incorpora el chorizo y el jamón serrano. Cocina durante unos minutos para que los sabores se mezclen.
- Agrega el arroz a la mezcla y revuelve bien para que se impregne con los sabores.
- Vierte el caldo caliente sobre la mezcla de arroz y revuelve. Ajusta la sal y la pimienta al gusto.
- Deja que la mezcla hierva a fuego medio durante unos minutos. Luego, reduce el fuego a bajo, cubre la sartén y cocina hasta que el arroz esté tierno y haya absorbido el líquido.
- Una vez listo, apaga el fuego y deja reposar durante unos minutos antes de servir.
- Sirve el arroz a la portuguesa en un plato grande, espolvorea con perejil fresco picado y disfruta de esta deliciosa combinación de sabores portugueses.
